Preparation of Beef Carpaccio

    Slice the Beef

    Freeze the beef tenderloin for about 30 minutes, then slice it very thinly against the grain using a sharp knife.

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.

    Marinate the Beef

    Lay the beef slices on a platter, drizzle with the marinade, and sprinkle with finely chopped shallots. Let it marinate in the refrigerator for at least 30 minutes.

Preparation of Pistachio Aioli

    Blend the Aioli Ingredients

    In a food processor, combine pistachios, garlic, egg yolk, and lemon juice. Blend until smooth.

    Add Olive Oil

    While the processor is running, slowly drizzle in the olive oil until the mixture is creamy. Season with salt to taste.

Assembly

    Serve the Carpaccio

    Arrange the marinated beef slices on individual plates. Top with shaved Grana Padano cheese and finely sliced jalapeno. Serve with pistachio aioli on the side.
