Method

Preparing the Lamb

    Season the Lamb

    Preheat your oven to 400°F (200°C). In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rack of lamb.

    Sear the Lamb

    In a hot skillet, sear the lamb rack on all sides until browned (about 3-4 minutes per side).

    Roast the Lamb

    Transfer the seared lamb to the oven and roast for 20-25 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

Preparing the Potato Olivette

    Cook the Potatoes

    Boil the diced potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.

    Add butter and heavy cream to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste.

Preparing the Vegetables

    In a skillet, heat olive oil over medium heat. Add zucchini, carrot, and bell pepper. Sauté until tender, about 5-7 minutes. Season with salt and pepper.
