Method

Preparation

    Beef Tenderloin

    Preheat the grill or skillet over high heat. Season the beef tenderloin with olive oil, salt, and black pepper. Sear on all sides until charred, about 8-10 minutes for medium-rare. Let rest for 10 minutes before slicing.

    Charred Broccolini

    Toss broccolini with olive oil, minced garlic, salt, and red pepper flakes. Grill or sauté for about 5-7 minutes until charred and tender.

    Yukon Gold Pave

    Slice Yukon Gold potatoes thinly. Layer in a baking dish with butter, cream, and salt. Bake at 180°C (350°F) for about 45 minutes until golden and tender.

    Roasted Turnips

    Preheat oven to 200°C (400°F). Toss turnips with olive oil, salt, and pepper. Roast for 25-30 minutes until caramelized.

    Onion Soubise

    Sauté chopped onions in butter until translucent. Stir in heavy cream and salt, cooking until thickened. Blend until smooth.

Assembly

    Plating

    Slice the beef tenderloin and arrange on a plate. Add a portion of the Yukon Gold pave, charred broccolini, and roasted turnips. Drizzle with onion soubise and serve immediately.
