Preparation of Beef Tataki

    Sear the Beef

    Season the Alberta beef tenderloin with salt and black pepper. Heat the sesame oil in a pan over high heat and sear the beef on all sides for about 1-2 minutes until browned. Remove and let cool.

    Chill the Beef

    Once cooled, wrap the beef tightly in plastic wrap and refrigerate for at least 30 minutes to an hour.

    Slice the Beef

    Remove the beef from the refrigerator and slice it thinly against the grain.

Preparation of Citrus Ponzu Sauce

    Mix the Sauce

    In a bowl, combine soy sauce, yuzu juice, mirin, rice vinegar, and dashi stock. Whisk until well combined.

Assembly

    Assemble the Dish

    Arrange the sliced beef on a plate. Drizzle with citrus ponzu sauce, top with sliced red onion, sprinkle furikake seasoning, and add tobiko on top. Serve immediately.
