    Prepare the Potatoes

    Wash the new potatoes and cut them in half. Boil them in salted water until tender, about 15 minutes. Drain and set aside.

    Blister the Peppers

    In a hot skillet, add a tablespoon of oil and add the shishito peppers. Sauté them until blistered and slightly charred, about 5 minutes. Season with salt and set aside.

Cooking the Ribeye

    Cook the Ribeye

    Season the ribeye generously with salt and black pepper. Heat a grill or skillet over high heat. Sear the ribeye for 4-5 minutes on each side for medium-rare, or until desired doneness. Let rest for 10 minutes before slicing.

Making the Sauce

    Prepare the Green Peppercorn Jus

    In the same skillet used for the ribeye, add the green peppercorns and beef stock. Bring to a simmer. Reduce by half, then stir in the heavy cream and butter. Cook until slightly thickened. Season with salt and black pepper to taste.

Plating

    Serve the Dish

    Slice the ribeye and plate with boiled new potatoes and blistered shishito peppers. Drizzle with the green peppercorn jus and serve immediately.
