Prepare lobster meat
If using pre-cooked lobster, ensure meat is cold and thoroughly drained. Pat dry with paper towels, then coarsely chop the claw, knuckle and tail meat into 1/2–3/4 inch pieces. Place lobster in a medium bowl.

Mix dressing and combine
To the lobster bowl add the finely diced celery, mayonnaise, lemon juice, and chopped chives or green onion. Gently fold the ingredients so the lobster stays in chunks. Season with sea salt and freshly ground black pepper. Taste and adjust salt/pepper or lemon as needed. The mixture should be lightly dressed — not soggy.

Toast rolls
Butter the outside and inside hinge of each top-split roll with about 1 tablespoon of unsalted butter per roll (split the 4 tbsp across 4 rolls). Heat a large skillet or griddle over medium heat until hot. Add the buttered rolls cut-side down and press lightly; toast 1–2 minutes until golden brown and crisp. Flip briefly (about 15–20 seconds) to warm the undersides, then remove from heat. Alternatively, toast under a broiler for 45–60 seconds, watching carefully.

Assemble
If using, place about 2 tablespoons of shredded iceberg lettuce in the bottom of each toasted roll (this keeps the roll from getting soggy and adds crunch). Divide the lobster mixture evenly among the 4 rolls, mounding gently. Serve immediately with lemon wedges on the side for squeezing.

Butter warming note
If butter solidifies while toasting multiple batches, keep an extra tablespoon in the pan and reduce heat slightly so rolls brown without burning.

Preheat oven and prepare fries: Preheat oven and prepare fries according to package directions (typically 425°F / 220°C). On a rimmed baking sheet toss the frozen fries with the olive oil and kosher salt so they are lightly coated and spread in a single layer.

Bake: Bake fries for the time indicated on the package, turning once halfway through, until golden and crisp (usually 15–25 minutes). Remove from oven and season with additional salt if desired.
