Method
Boba (Tapioca Pearls)
Boil pearls
Bring 10 cups water to a rolling boil in a large pot. Add 1 cup dry tapioca pearls and stir immediately to prevent sticking. Return to a boil, cover, and cook according to package times (typically 20–30 minutes for black boba) until pearls are tender with a slight chew.
Rest and rinse
Turn off heat, cover the pot, and let pearls sit 10–15 minutes (or longer for chewier texture). Drain pearls into a colander and rinse briefly with warm water to remove surface starch.
Sweeten pearls
While warm, toss drained pearls with 3 tablespoons brown sugar (or 3 tbsp brown sugar syrup) in a bowl so they absorb sweetness and stay shiny. Keep covered until assembling drinks (best used within 2 hours).
Tea Base
Brew strong tea
Select one tea flavor. Use 2 cups boiling water and steep 2 strong tea bags (or 2 tbsp loose leaf) for 4–6 minutes for black tea or 2–3 minutes for green/jasmine. Remove tea bags or strain leaves, then chill to room temperature or refrigerate until cold (at least 15–20 minutes).
Cold preparation for fruit teas
For fruit/herbal options, steep tea slightly weaker (3–4 minutes) and mix with 2 tablespoons fruit syrup or 1/2 cup fresh fruit slices, lightly muddled. Chill before assembling.
Milk / Flavoring
Prepare milk/flavor base
Choose a milk or creamer (1 cup). For matcha milk tea, whisk 1 tsp matcha with 2 tablespoons hot water until smooth, then combine with 1 cup milk. For taro milk tea, dissolve 2 tbsp taro powder in 2–3 tbsp hot water then stir into milk. For simple milk tea, combine chilled tea (about 3/4 cup) with 1/4–1/2 cup milk depending on desired creaminess.
Sweeten to taste
Add sweetener(s): start with 1–2 tbsp simple syrup (or 1 tbsp vanilla or honey). For brown sugar variant, add 1–2 tbsp brown sugar syrup to milk or to the inside of the serving glass for visual effect.
Assemble Drink
Place 3–4 tablespoons warm sweetened boba into the bottom of a tall glass (adjust to preference).
Add ice cubes to the glass if serving cold (about 1–1.5 cups ice).
Taste and adjust sweetness, adding more simple syrup, honey, or flavored syrup as desired (start with 1 tsp increments).
Garnish: add a wedge of lemon or fresh fruit slices for fruit teas, or drizzle extra brown sugar syrup on top/around the glass for brown sugar milk tea.
Serve with a boba straw and enjoy immediately while pearls are soft and warm.
