Make the simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring occasionally, until the sugar is completely dissolved and the mixture is clear (do not boil vigorously). This should take about 3–5 minutes.
Flavoring
Measure and combine flavors
Once the simple syrup is cool, whisk in 1 cup fresh lemon juice (or 1 cup of your chosen juice or fruit puree). If using lemon, add 1 tablespoon finely grated lemon zest for extra brightness. Stir in 1 tablespoon light corn syrup if using and a pinch of salt to enhance flavor. Taste and adjust: for stronger flavor, add up to 2 tablespoons more juice or 1–2 teaspoons of additional sugar syrup if needed.
If using fruit puree (berries, mango, etc.), strain the puree through a fine-mesh sieve for a smoother texture, pressing to extract as much liquid as possible. Combine strained puree with the chilled simple syrup and mix until homogeneous.
Freezing and Finishing
Freeze using an ice cream maker (recommended)
Pour the flavored syrup into the bowl of an ice cream maker and churn according to manufacturer instructions until it reaches a granita-like, slushy texture (usually 20–30 minutes). Transfer the churned Italian ice to an airtight container and freeze for at least 2 hours to firm up. Before serving, let sit at room temperature 5–10 minutes and then scrape with a fork for a granular texture.
Freeze without an ice cream maker (no-churn)
Pour the mixture into a shallow metal or glass baking pan (9x9 or similar) and place it in the freezer. After 30–45 minutes, use a fork to scrape the frozen edges and break up ice crystals; return to freezer. Repeat scraping every 30–45 minutes for 2–3 hours until the mixture is uniformly granular. Transfer to an airtight container and freeze until firm (about 1 hour). When serving, let rest 5–10 minutes and scrape with a fork to fluff.
Spoon the Italian ice into serving dishes, garnish with fresh fruit or mint if desired, and serve immediately. Store leftovers in an airtight container for up to 2 weeks for best texture (longer storage may lead to icier texture).
