Boil pearls
Bring 4 cups of water to a rolling boil in a medium saucepan. Add 3/4 cup dried black tapioca pearls to the boiling water, stirring gently so they don’t stick. Return to a vigorous simmer, cover, and cook, stirring occasionally, following package timing (typically 5–8 minutes for quick-cook pearls or 25–30 minutes for old-style pearls). For this recipe assume quick-cook pearls: simmer uncovered for 5–8 minutes until pearls are soft but still slightly chewy in the center.

Rest and drain
Once the pearls reach desired chewiness, remove from heat, cover, and let sit for 10 minutes. Drain pearls through a fine-mesh sieve and rinse briefly under warm water to remove excess starch.

Make brown sugar syrup and finish pearls
While pearls are cooking (or immediately after draining), dissolve 1/2 cup brown sugar in 1/4 cup hot water in a small bowl, stirring until smooth. Transfer the drained hot pearls into the warm syrup and stir to coat. Let them sit in the syrup at room temperature for at least 10 minutes so they absorb sweetness and remain glossy. Keep pearls warm if serving immediately; if not, refrigerate in syrup and reheat briefly in hot water before serving.

Brew tea
Bring 4 cups of water to a boil. Remove from heat and add 3 tablespoons loose black tea (or 4 tea bags). Steep for 4–6 minutes depending on desired strength. Strain out the leaves (or remove bags). Stir in 2 teaspoons granulated sugar if you want a slightly sweetened tea. Chill the brewed tea in the refrigerator for at least 20 minutes or serve over ice immediately if you prefer chilled bubble tea.

Prepare milk
Measure 1 cup of whole milk (or chosen non-dairy milk). If you prefer a sweeter or creamier drink, stir 2 teaspoons simple syrup or brown sugar into the milk until dissolved. For a creamier texture, use half-and-half or add a splash of heavy cream (replace part of the milk). Chill until ready to assemble.

Assemble the drink
Divide the syrup-coated tapioca pearls among 4 serving glasses (about 3–4 tablespoons pearls per glass). Add a handful of ice cubes to each glass (about 1/4 cup ice per glass). Pour chilled brewed tea to fill each glass about two-thirds full, leaving room for milk. Top each with about 1/4 cup milk (adjust to taste). Stir gently to combine; the milk will create a layered effect if poured slowly over the back of a spoon.

Garnish and serve
If desired, drizzle about 1/2 tablespoon caramelized brown sugar inside each glass before adding pearls for a striking ‘brown sugar’ look. Insert a wide boba straw and serve immediately while pearls are soft and drink is cold.
