Method

Preparing the Seafood

    Prepare the Pastrami Steelhead

    Slice the pastrami steelhead into thin strips and arrange them on one side of the tower.

    Prepare the Albacore Tuna Tataki

    Sear the albacore tuna on all sides until rare, then slice thinly and place next to the pastrami steelhead.

    Cook the Mussels

    In a pot, combine white wine vinegar, olive oil, garlic, bay leaves, chili flakes, salt, and pepper. Add mussels, cover, and steam until mussels open. Let cool and place in a serving dish.

    Prepare Dungeness Crab Louie

    In a bowl, mix mayonnaise, ketchup, lemon juice, Worcestershire sauce, paprika, and chopped parsley. Season with salt. Fold in the cooked Dungeness crab meat and serve it in a small bowl.

    Prepare Snow Crab Legs

    Boil snow crab legs in salted water for 5-7 minutes, then chill in ice water. Arrange in a tower.

    Prepare Prawns

    Boil prawns in salted water for 2-3 minutes, then chill in ice water. Arrange around the seafood tower.

    Arrange Oysters

    Shuck oysters and serve them on ice with lemon wedges.
