Method

Steak Preparation

    Marinate the Steak

    Rub the hanger steak with olive oil, salt, and black pepper. Let it marinate for at least 30 minutes at room temperature.

    Grill the Steak

    Preheat the grill to high heat. Grill the steak for about 4-5 minutes on each side for medium-rare. Remove from heat and let rest for 5 minutes before slicing.

Preserved Beets

    Prepare the Beets

    In a pot, combine white vinegar, water, sugar, and salt. Bring to a boil. Add the beets and simmer for about 45 minutes or until tender. Let cool and slice.

Tokyo Turnips

    Roast the Turnips

    Preheat the oven to 400°F (200°C). Toss the Tokyo turnips with olive oil, salt, and pepper. Roast for 20-25 minutes until tender and slightly caramelized.

Charred Turnip Tops

    Toss turnip tops with olive oil and salt. Grill over high heat for 2-3 minutes until charred and wilted.

Beet Purée

    Blend the Beet Purée

    In a blender, combine cooked beets, olive oil, salt, and pepper. Blend until smooth and creamy.

Sauce Verte

    Make the Sauce

    In a food processor, combine parsley, chives, capers, lemon juice, and olive oil. Blend until smooth. Adjust seasoning with salt and pepper.
