    Prepare Toppings

    Cook the bacon in a skillet until crispy. Remove and chop into small pieces. If using other toppings such as peppers, tomatoes, spinach, mushrooms, or onions, sauté them in the same skillet until softened.

    Beat the Eggs

    In a bowl, crack the free run eggs and whisk them until well combined. Season with salt and pepper.

    Cook the Omelette

    Heat butter or oil in a non-stick skillet over medium heat. Pour in the beaten eggs and let them cook undisturbed for about 2 minutes, or until the edges begin to set.

    Add Toppings

    Once the eggs are mostly set, add your choice of toppings (up to 4) evenly over one half of the omelette. This could include bacon, sautéed vegetables, smoked salmon, or aged white cheddar.

    Fold and Serve

    Carefully fold the other half of the omelette over the toppings and let it cook for another minute or until the cheese is melted and the eggs are fully cooked. Slide onto a plate and serve hot.
