Preparation

    Prepare the Creamed Spinach

    In a skillet, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add fresh spinach and cook until wilted. Pour in heavy cream, add Parmesan cheese, salt, and pepper, and cook until thickened. Set aside.

    Make the Cheese Sauce

    In a saucepan, melt the butter over medium heat. Whisk in flour and cook for 1 minute until bubbly. Gradually add milk while whisking until smooth. Stir in shredded Sauvagine cheese and cook until melted. Season with salt to taste.

    Prepare the Oysters

    Preheat the oven to 375°F (190°C). Clean the oysters and place them on a baking sheet.

    Prepare the Topping

    In a bowl, mix breadcrumbs, wild oregano, and olive oil until combined.

Assembly and Baking

    Assemble the Oysters

    Spoon the creamed spinach evenly over each oyster, followed by the cheese sauce. Finally, sprinkle the breadcrumb topping over each oyster.

    Bake the assembled oysters in the preheated oven for about 15-20 minutes, or until the topping is golden brown and crispy.
