Method
Preparation of Gelée

Make Tomato Gelée
In a saucepan, combine tomato juice and salt. Sprinkle agar-agar over the surface and let it sit for 5 minutes. Heat over medium-high heat, stirring continuously until the mixture comes to a boil. Reduce heat and simmer for 2 minutes. Pour into a shallow dish and refrigerate until set, about 1 hour.

Prepare the Salad
While the gelée is setting, cube the watermelon and yellow tomatoes. In a large bowl, combine the cubed watermelon and yellow tomatoes. Drizzle black olive oil and balsamic vinegar over the top, and toss gently to combine.

Plate the Dish
Once the gelée has set, cut it into cubes. To serve, place a scoop of the watermelon and tomato mixture on a plate, top with a few cubes of tomato gelée, and a generous piece of burrata cheese. Garnish with heirloom basil leaves.
