Prepare the Egg Yolk

In a small bowl, combine egg yolks with hot honey and let sit for 30 minutes to cure.

Make the Confit Shallot Aioli

In a bowl, mix confit shallots with mayonnaise, Worcestershire sauce, Dijon mustard, and a pinch of salt and pepper. Set aside.

Prepare the Onion Rings

Heat vegetable oil in a deep pan. Dredge torpedo onion slices in flour, then fry until golden brown. Drain on paper towels.

Toast the Rye Bread

Toast the rye bread slices until crispy. Cut into points.

Assemble the Tartare

In a bowl, combine the diced beef tenderloin with salt, pepper, and any additional seasonings. Form into a mound on a plate, top with the cured egg yolk, and serve with aioli, onion rings, and rye toast points.
