Making the Sorbet

Prepare the Sorbet
Cut the Charentais melon in half, remove the seeds, and scoop out the flesh. Blend the melon flesh until smooth. In a saucepan, combine sugar and water, and heat until the sugar dissolves. Mix in the melon puree and lemon juice. Chill the mixture, then churn in an ice cream maker according to manufacturer's instructions. Freeze until firm.

Plate the Dessert
Once the sorbet and gelée are set, scoop the sorbet into serving bowls. Cut the golden kiwi and stone fruit into slices and arrange them around the sorbet. Add mixed berries on top. Grate or melt the white chocolate and drizzle over the fruits. Serve immediately.
