Prepare the Apples
Wash the Gravenstein apples thoroughly. Cut them into quarters and remove any seeds.

Extract Apple Juice
Using a juicer or a blender, process the apple quarters until you obtain a smooth mixture. Strain the juice through a fine-mesh sieve or cheesecloth to remove solids.

Mix Ingredients
In a large bowl, combine the apple juice, water, sugar, and the juice of the Eureka lemon. Stir until the sugar is dissolved.

Add Yeast
Sprinkle the yeast over the mixture and stir gently to incorporate.

Fermentation
Transfer the mixture to a sanitized fermentation vessel. Seal it with an airlock and let it ferment in a cool, dark place for about 1 to 2 weeks, or until fermentation is complete.

Carbonation (Optional)
If you prefer sparkling cider, add a small amount of sugar (about 1/2 tsp per bottle) before sealing to encourage carbonation during bottle conditioning.

Refrigerate the bottles before serving. Enjoy your Humboldt Cider chilled!
