    Prepare the Beef

    Preheat the oven to 400°F (200°C). Rub the filet of beef with olive oil, salt, and black pepper. Sear in a hot skillet for 3-4 minutes on each side until browned. Transfer to the oven and roast for 15-20 minutes, until it reaches your desired doneness.

    Make the Croquettes

    Boil Yukon Gold potatoes until tender. Drain, mash, and let cool. Mix in egg yolks, flour, Parmesan cheese, salt, and pepper. Shape into small balls, coat in breadcrumbs, and refrigerate for 30 minutes. Fry in hot oil until golden brown.

Baby Artichoke & Champignon a la Grecque

    Prepare the Vegetables

    Trim and clean baby artichokes and mushrooms. In a skillet, heat olive oil and sauté the artichokes and mushrooms for 5-7 minutes. Add lemon juice, bay leaves, salt, and pepper. Cook for an additional 5 minutes.

    Cook the Pancetta

    In a skillet, cook pancetta over medium heat until crispy. Remove and let drain on paper towels.

    Plate the Dish

    Slice the filet of beef and arrange on a plate. Add the Yukon Gold croquettes, sautéed baby artichokes, and champignons. Top with crispy pancetta. Garnish with lemon wedges and chopped parsley.
