Brewing

Mashing
Heat 5 gallons of filtered water to 165°F (74°C). Add the crushed malts into the water and maintain a temperature of 150-155°F (65-68°C) for 60 minutes.

Sparging
After mashing, sparge the grains with 170°F (77°C) water until you collect about 6.5 gallons of wort.

Boiling
Bring the wort to a boil and add the Northern Brewer hops. Boil for 60 minutes, adding the Fuggle hops in the last 15 minutes of the boil.

Cooling
Cool the wort quickly using a wort chiller or an ice bath to about 65-70°F (18-21°C).

Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the lager yeast. Seal and ferment at 50-55°F (10-13°C) for 2-4 weeks.

Bottling
After fermentation is complete, bottle the lager with priming sugar and allow it to carbonate at room temperature for 1-2 weeks.

Chilling and Serving
