Prepare the Pastry

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Roll Out Puff Pastry

    On a lightly floured surface, roll out the puff pastry sheets to about 1/8 inch thick. Cut into circles of about 4 inches in diameter.

    Create Vol au Vent Shells

    Cut smaller circles (about 2 inches) from the center of half of the larger circles to create a ring. Place the rings on top of the corresponding larger circles to form the vol au vent shells.

    Egg Wash

    Beat the egg and brush it over the pastry to give it a golden color when baked.

    Bake

    Place the pastry on a baking sheet and bake in the preheated oven for about 15-20 minutes or until golden and puffed. Remove from the oven and let cool.

Prepare the Filling

    Sauté Asparagus

    In a skillet, melt the butter over medium heat. Add the chopped shallot and sauté until translucent, about 3 minutes. Add the asparagus and cook for another 3-4 minutes until tender but still crisp.

    Combine Ingredients

    Stir in the lobster meat, heavy cream, salt, black pepper, and lemon juice. Cook until heated through, about 2-3 minutes.

Assemble and Serve

    Fill Pastry Shells

    Carefully spoon the lobster and asparagus filling into the cooled pastry shells.

    Serve Warm

    Serve immediately garnished with a sprinkle of fresh herbs if desired.
