    Make the Pastry

    In a large bowl, combine flour, sugar, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water a tablespoon at a time until dough holds together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

    Prepare the Apples

    Preheat oven to 375°F (190°C). Peel, core, and slice the apples. Toss with lemon juice, cinnamon, and brown sugar.

    Assemble the Tarte

    Roll out the chilled pastry and fit it into a tart pan. Arrange the apple slices in a tulip shape within the crust. Bake for 35-40 minutes, until the apples are tender and the crust is golden.

For the Cinnamon Ice Cream

    Make the Ice Cream Base

    In a saucepan, heat the cream and milk over medium heat. In a bowl, whisk together the sugar, cinnamon, and egg yolks. Slowly add the hot cream mixture to the yolks, whisking constantly. Return to the saucepan and cook until thickened.

    Chill and Churn

    Remove from heat and stir in vanilla extract. Chill the mixture completely, then churn in an ice cream maker according to manufacturer’s instructions.
