Method

Steak Preparation

  1. 1

    Season the Steak

Rub the ribeye steak with olive oil, minced garlic, salt, and black pepper. Let it marinate for at least 30 minutes at room temperature.

  2. 2

    Sear the Steak

Preheat a cast-iron skillet over high heat. Once hot, add the steak and sear for about 4-5 minutes on each side for medium-rare. Add rosemary sprigs during the last minute of cooking.

  3. 3

    Rest the Steak

Remove the steak from the skillet and let it rest for at least 10 minutes before slicing.

Sauce Preparation

  1. 4

    Prepare the Sauce

In the same skillet, add chopped shallots and cook until translucent. Pour in red wine and beef broth, scraping up any browned bits from the bottom of the skillet. Add thyme and let it simmer until reduced by half.

  2. 5

    Finish the Sauce

Remove the thyme sprig and whisk in butter until melted and the sauce is glossy. Season with salt and pepper to taste.
