Prepare the Raspberries
In a blender, puree the fresh raspberries until smooth. Strain through a fine sieve to remove seeds and set aside.

Whip the Egg Whites
In a clean bowl, whip the egg whites until soft peaks form. Gradually add in granulated sugar and continue whipping until stiff peaks form.

Bake the Soufflés
Pour the mixture into the prepared ramekins and bake for about 12-15 minutes until puffed and slightly golden.

Heat the Dairy
In a saucepan, combine the milk and heavy cream. If using a vanilla bean, split it and add it to the mixture. Heat until just simmering.

Whisk Egg Yolks and Sugar
In a bowl, whisk the egg yolks with granulated sugar until thick and pale.

Thicken the Sauce
Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly and coats the back of a spoon.

Strain and Chill
Strain the sauce through a fine sieve to remove any lumps or the vanilla bean pod. Let it cool before serving.
