Ravioli Dough

Beurre Noisette

Method

Ravioli Preparation

  1. 1

    Make the Dough

In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

  2. 2

    Prepare the Filling

In a bowl, mix the goat cheese, chutney, and chopped basil until well combined. Set aside.

  3. 3

    Roll Out the Dough

Divide the dough into quarters. Roll out one piece at a time on a floured surface until thin (about 1/16 inch). Cut into circles using a cookie cutter.

  4. 4

    Assemble the Ravioli

Place a teaspoon of filling in the center of each circle. Moisten the edges with water, fold the dough over to form a half-moon shape, and press to seal. Repeat with remaining dough and filling.

Cooking and Serving

  1. 5

    Cook the Ravioli

Bring a large pot of salted water to a boil. Gently add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

  2. 6

    Make the Beurre Noisette

In a skillet, melt the butter over medium heat. Allow it to cook until it turns golden brown and has a nutty aroma. Add sage leaves and cook for an additional minute. Season with salt to taste.

  3. 7

    Serve

Plate the ravioli and drizzle with the beurre noisette. Garnish with additional sage leaves if desired.
