Prepare the Grape Pomace

Collect the grape pomace after pressing grapes for wine. Ensure it is fresh and free from any contaminants.

Combine Ingredients

In a large fermentation vessel, combine the grape pomace with water. Mix thoroughly to ensure the pomace is fully saturated.

Add Yeast

Sprinkle the yeast over the mixture. Stir gently to incorporate it into the pomace and water.

Fermentation

Ferment the Mixture

Cover the vessel with a cloth and let it sit at room temperature for 5 to 7 days. Stir the mixture daily to promote fermentation and prevent mold.

Distillation

Distill the Fermented Pomace

After fermentation, transfer the liquid to a still. Heat gently and collect the distillate in a separate container. This is your grappa.

Optional Flavoring

If desired, add citrus zest and herbs during the distillation process for added flavor. This can be adjusted to personal taste.

Bottling

Bottle the Grappa

Once distillation is complete, allow the grappa to cool. Pour it into clean bottles, seal tightly, and label.

Aging (Optional)

For a smoother taste, age the grappa in wooden barrels for a few months to a year before consuming.
