Method

Preparing the Steak

1

Marinating the Steak

In a small bowl, mix together olive oil, minced garlic, chopped fresh rosemary, salt, and black pepper. Rub this mixture all over the T-bone steaks. Let the steaks marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

2

Preheating the Grill

Preheat your grill to high heat. If using a charcoal grill, prepare the coals until they are glowing and covered with ash.

Cooking the Steak

3

Grilling the Steak

Once the grill is hot, place the marinated T-bone steaks on the grill. Cook for about 4-5 minutes on one side until a nice crust forms.

4

Flipping the Steak

Flip the steaks and continue to grill for another 4-5 minutes for medium-rare, or longer if you prefer your steak more done. Use a meat thermometer to check for desired doneness (130°F for medium-rare).

5

Resting the Steak

Remove the steaks from the grill and transfer them to a plate. Cover loosely with foil and let them rest for 5-10 minutes to allow the juices to redistribute.

Preparing Optional Sides

6

Cooking Asparagus

While the steak is resting, prepare the asparagus. Toss the asparagus with olive oil, salt, and pepper. Grill on a medium heat for about 5-7 minutes until tender and slightly charred.

7

Making Buttered Potatoes

Boil the potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot. Add butter, salt, and pepper, then mash until smooth.
