Mix Filling
In a large bowl, combine ground chicken, ground pork, green onions, garlic, ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Fill Dumplings
Place a teaspoon of filling in the center of each wonton wrapper. Moisten the edges with water and fold to seal, pressing out any air. Ensure they are well sealed to prevent leaking.

Prepare for Frying
Heat oil in a large skillet over medium heat. Once hot, add the dumplings in batches, ensuring not to overcrowd the pan.

Fry Dumplings
Fry the dumplings for about 2-3 minutes until the bottom is golden brown. Then, add a few tablespoons of water to the skillet and cover immediately to steam for another 3-4 minutes. Remove the lid and continue frying until the water evaporates and the bottoms are crispy.

In a small bowl, combine soy sauce, rice vinegar, chili oil, minced garlic, and toasted sesame seeds. Stir well to combine.
