Prepare the Beef Patty

    Shape the Patties

    In a mixing bowl, combine the Wagyu beef, salt, black pepper, and garlic powder. Mix gently until just combined. Divide the mixture into 2 equal portions and shape each portion into a patty about 1 inch thick.

    Cook the Patties

    Heat a skillet or grill over medium-high heat. Cook the Wagyu patties for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. During the last minute of cooking, place the cheddar and Swiss cheese on top of each patty to melt.

Prepare the Sourdough Bread

    Butter the Bread

    Spread butter on one side of each slice of sourdough bread.

    Grill the Bread

    In the same skillet or grill used for the patties, place the slices of bread butter-side down. Grill until golden brown and crispy, about 2-3 minutes.

Assemble the Patty Melt

    Layer the Ingredients

    Place one grilled slice of sourdough bread on a plate, add the cooked Wagyu patty with melted cheese on top, and then layer with caramelized onions and pickles if desired. Top with another slice of grilled sourdough bread.

    Cut the patty melt in half and serve immediately while hot.
