    Sauté Spinach and Arugula

    In a skillet over medium heat, add the olive oil. Once hot, add the fresh spinach and arugula. Sauté for about 2-3 minutes, until wilted. Remove from heat and set aside.

    Prepare Tomato and Avocado

    Slice the tomato and avocado. Set them aside for assembly.

Hollandaise Sauce Preparation

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, remove from heat and let it cool slightly.

    Whisk Egg Yolks

    In a heatproof bowl, whisk the egg yolks and lemon juice together until pale and frothy.

    Create the Hollandaise Sauce

    Place the bowl over a saucepan of simmering water, ensuring the bowl does not touch the water. Gradually pour the melted butter into the egg mixture while whisking continuously until the sauce thickens. Season with salt and cayenne pepper.

Assembly

    Toast English Muffins

    While the hollandaise sauce is being prepared, toast the English muffins until golden brown.

    On each toasted muffin half, layer the sautéed spinach and arugula, followed by slices of tomato and avocado.
