Pork Carnitas Preparation

Preheat your oven to 300°F (150°C).

In a large Dutch oven, combine the pork shoulder, garlic, onion, cumin, oregano, salt, black pepper, orange juice, and lime juice.

Cover the pot with a lid and place it in the preheated oven.

Cook for about 3-4 hours, until the pork is very tender and can be easily shredded with a fork.

Once cooked, remove the pork from the oven and shred it with two forks.

If desired, you can broil the shredded pork in a baking dish for 5-10 minutes to get crispy edges.

Crack the eggs into the simmering water, one at a time, and poach for about 3-4 minutes until the whites are set but the yolks are still runny.

While the eggs are poaching, toast the English muffins until golden brown.

On each toasted muffin half, layer a generous amount of the pulled pork carnitas.

Place a poached egg on top of the pork.

Drizzle chipotle sauce over the entire dish.

Garnish with chopped cilantro before serving.
