Method
Prepare the Hollandaise Sauce

Melt the Butter
In a small saucepan, melt the butter over low heat. Once melted, set aside to cool slightly.

Whisk the Egg Yolks
In a heat-proof bowl, whisk together the egg yolks, lemon juice, and salt until the mixture is thick and pale.

Add Seasoning
Remove from heat and stir in a pinch of cayenne pepper. Keep warm until ready to serve.
Poach the Eggs

Prepare the Water
Fill a saucepan with about 3 inches of water. Add the vinegar and bring to a gentle simmer.

Poach the Eggs
Crack each egg into a small bowl. Gently slide each egg into the simmering water. Poach for about 3-4 minutes, or until the whites are set and the yolks are still runny.

Cook the Canadian Bacon

Sear the Bacon
In a skillet over medium heat, add the Canadian bacon slices. Cook for about 2-3 minutes on each side until heated through and slightly crispy.
Assemble the Benedict
