    Prepare the Ingredients

    Slice the ham, tomato, and avocado. Halve the English muffins.

    Toast the English Muffins

    Toast the halved English muffins until golden brown. Set aside.

Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the butter over low heat. Once melted, remove from heat and set aside.

    Whisk Egg Yolks

    In a heatproof bowl, whisk together the egg yolks, lemon juice, Dijon mustard, and salt.

    Cook the Sauce

    Place the bowl over a pot of simmering water (double boiler). Whisk continuously until the mixture is thick and doubled in volume.

    Add Butter

    Slowly drizzle in the melted butter while whisking vigorously until fully incorporated and the sauce is smooth. Stir in cayenne pepper.

Eggs Poaching

    Poach the Eggs

    In a pot of simmering water, create a gentle whirlpool and crack each egg into the center. Poach for about 3-4 minutes or until the whites are set but yolks remain runny.

Assembly

    Assemble the Benedict

    On each toasted muffin half, layer the sliced ham, followed by the tomato and avocado. Top with a poached egg.

    Generously drizzle the hollandaise sauce over each assembled Benedict.
