Cook the Protein
Choose your protein - chicken, pork carnitas, or shrimp. For chicken, season with salt, pepper, and your preferred spices, then cook in a skillet over medium heat for about 7-10 minutes until fully cooked. For pork carnitas, heat in a pan over medium heat until warmed through (about 5-7 minutes). For shrimp, season with salt and cook for about 3-4 minutes until they turn pink and opaque.

Prepare the Taco Shells
Warm the taco shells in a preheated oven at 350°F (175°C) for 5 minutes until crispy.

Assemble the Tacos
In each taco shell, add a layer of shredded lettuce, followed by a generous spoonful of pico de gallo, guacamole, and the chosen protein. Top with shredded cheddar cheese and drizzle with chipotle lime dressing.

Serve
Serve the tacos immediately while warm. Enjoy with extra lime wedges on the side if desired.
