Pot Roast Preparation

    Seasoning the Roast

    Rub the beef chuck roast with salt and black pepper on all sides.

    Searing the Roast

    In a large skillet, heat olive oil over medium-high heat. Add the roast and sear it for about 4-5 minutes on each side until browned. Transfer the roast to a slow cooker.

    Adding Vegetables

    In the same skillet, add chopped onions, carrots, and celery. Sauté for about 5 minutes until they are slightly softened. Add minced garlic and cook for an additional minute. Transfer the vegetables to the slow cooker.

    Pour beef broth over the roast and vegetables. Add thyme and bay leaves. Cover the slow cooker and cook on low for 8 hours or high for 4 hours.

Mashed Potatoes

    In a large pot, add cubed potatoes and cover with water. Bring to a boil and cook for 15-20 minutes, or until tender.
