Method
Prepare the Pie Crust

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined.

Cut in Butter
Add the cold, unsalted butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Add Ice Water
Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together. Do not overmix.

Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Pie Filling

Prepare Fruit
If using apples, peel and slice them. For berries or cherries, rinse and remove any stems or pits.

Mix Filling Ingredients
In a separate bowl, combine the prepared fruit, granulated sugar, cornstarch, ground cinnamon, lemon juice, and vanilla extract. Stir until the fruit is well-coated and set aside.
Assemble and Bake the Pie

Preheat Oven
Preheat your oven to 425°F (220°C).

Pour the fruit filling into the prepared pie crust, spreading it evenly.

Bake the Pie
Bake the pie in the preheated oven for 15 minutes. Then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes, or until the filling is bubbly and the crust is golden brown.

Once baked, remove the pie from the oven and let it cool on a wire rack. Serve with whipped cream if desired.
