Preparing the Chips

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/2 inch wide.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch.

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

    Fry the Potatoes (First Fry)

    In a large pot, heat 4 cups of vegetable oil to 325°F (163°C). Add the potatoes in batches and fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

    Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for another 3-4 minutes until golden brown and crispy. Drain on paper towels and sprinkle with salt.

    In a mixing bowl, combine 1 cup all-purpose flour, 1 cup cornstarch, 1 tsp baking powder, 1 tsp salt, and 1 tsp black pepper. Gradually whisk in 1 cup of cold beer until the batter is smooth.

    In a deep pot or fryer, heat 4 cups of vegetable oil to 375°F (190°C).

    Coat the Fish

    Dip each piece of white fish fillet into the batter, allowing excess to drip off.
