Crust Preparation

Prepare the crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until the mixture resembles wet sand.

Form the crust
Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish to form an even layer. Bake in the preheated oven for 8-10 minutes until golden. Remove and let cool.

Mix filling ingredients
In a large mixing bowl, combine the sweetened condensed milk, key lime juice, and egg yolks. Whisk together until smooth and well combined.

Fill the crust
Pour the filling mixture into the cooled graham cracker crust, spreading it evenly.

Bake the pie
Bake the pie in the oven at 350°F (175°C) for 10-12 minutes. The filling should be set but still slightly jiggly in the center. Remove from the oven and allow to cool at room temperature.

Make the whipped cream
In a large mixing bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.

Top the pie
Spread the whipped cream over the cooled key lime filling. Sprinkle lime zest on top for garnish.
Serving

Chill and serve
Refrigerate the pie for at least 2 hours before serving to allow the flavors to meld and the pie to set further. Slice and enjoy!
