Base Preparation

Prepare Quinoa with Kale & Soybeans
Rinse 1 cup of quinoa under cold water. In a medium pot, combine the rinsed quinoa, 2 cups of water, chopped kale, and soybeans. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and water is absorbed. Remove from heat and let it sit for 5 minutes before fluffing with a fork.

Prepare Steamed Rice
Rinse 1 cup of rice under cold water. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil over medium-high heat. Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and water is absorbed. Remove from heat and let it sit for 5 minutes.

Grill Chicken Breast
Season the chicken breast with salt and pepper. Preheat a grill or skillet over medium heat. Grill the chicken for 6-7 minutes on each side or until cooked through. Let it rest for 5 minutes before slicing into cubes.

Prepare Tofu
Press tofu to remove excess moisture, then cut into cubes. Heat a non-stick skillet over medium heat and sauté tofu in a little oil until golden brown on all sides, about 10 minutes.

Prepare Chickpeas
If using canned chickpeas, drain and rinse. For a warm option, sauté chickpeas in a skillet over medium heat for 5 minutes until heated through.

Chop Veggies
Wash and prepare the veggies: halve the cherry tomatoes, dice the cucumber, slice the bell peppers, and julienne the carrots. Mix them in a bowl.

Mix Sauces
In a small bowl, combine soy sauce, sesame oil, sriracha, and peanut sauce. Mix well and set aside.
