Citrus Butter

Prepare Citrus Butter
In a medium bowl, combine the softened unsalted butter, champagne, parsley, chives, lemon juice, lime juice, salt, and black pepper. Mix until well combined and smooth. Set aside.

Cook Salmon
Place the salmon fillets skin-side down on the grill or a baking sheet. Cook for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Top with Citrus Butter
In the last 2 minutes of cooking, spoon the prepared citrus butter over the salmon fillets and allow it to melt slightly.

Plate the Dish
Serve the salmon topped with mango pico de gallo on a plate. Choose one of the serving options (mashed potatoes, steamed rice, veggie quinoa, or elote pasta salad) and place it beside the salmon. Enjoy!
