Prepare the Egg Filling

    Scramble the Eggs

    In a medium bowl, whisk together the eggs, salt, and black pepper until fully combined.

    Cook the Vegetables

    In a skillet over medium heat, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened.

    Combine Ingredients

    Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring gently, until the eggs are scrambled and just set, about 4-5 minutes.

    Add Cheese

    Sprinkle the shredded cheddar cheese over the eggs and stir until melted and well combined.

Cook the Protein

    Prepare Your Choice of Protein

    In a separate skillet, cook the bacon, sausage, ham, or chorizo until fully cooked and crispy as desired. Drain excess grease.

Prepare the Potatoes

    Cook Hash Browns or Country Potatoes

    In the same skillet used for the protein, add the hash browns or country potatoes and cook until golden brown and crispy, about 5-7 minutes.

Assemble the Burrito

    Fill the Tortillas

    Lay a large flour tortilla on a flat surface. Spoon a generous portion of the scrambled egg mixture onto the center of the tortilla. Add your choice of cooked protein, followed by hash browns or country potatoes.

    Top with pico de gallo and sliced avocado.

    Fold the sides of the tortilla inward, then roll it up from the bottom to the top to enclose the filling. Repeat with the second tortilla.
