Method
Mango Salsa
Prepare the Ingredients
Peel and dice the ripe mango into small cubes. Remove the seeds and finely chop the red bell pepper, red onion, and jalapeño pepper (remove seeds for less heat). Chop the fresh cilantro.
Mix the Salsa
In a large mixing bowl, combine the diced mango, red bell pepper, red onion, jalapeño pepper, and cilantro. Add lime juice, salt, and black pepper. Stir gently until all ingredients are well mixed.
Chill
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
Tortilla Chips
Cut the Tortillas
Stack the corn tortillas and cut them into triangles (like pizza slices).
Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.
Fry the Chips
Carefully add the tortilla triangles in batches to the hot oil. Fry until they are crispy and golden brown, about 2-3 minutes, turning occasionally. Remove chips with a slotted spoon and drain on paper towels.
Season the Chips
While still warm, sprinkle the fried chips with salt to taste.
