Method

Prepare the Blackened Salmon

    Mix the Spice Rub

    In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, salt, and black pepper to create the blackening spice mix.

    Season the Salmon

    Rub the spice mix generously on both sides of the salmon fillets.

    Heat Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

    Cook the Salmon

    Place the seasoned salmon fillets in the skillet and cook for 4-5 minutes on each side, or until the salmon is blackened and cooked through. Remove from heat and set aside.

Cook the Rice

    Rinse the Rice

    Rinse the white rice under cold water until the water runs clear to remove excess starch.

    Boil Water

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt.

    Cook the Rice

    Add the rinsed rice to the boiling water. Cover and reduce the heat to low. Simmer for 18-20 minutes or until all the water has been absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Sauté the Seasonal Vegetables

    Prepare the Vegetables

    Slice the zucchini, bell pepper, and carrot into bite-sized pieces.

    Heat Olive Oil

    In a separate skillet, heat 1 tablespoon of olive oil over medium heat.

    Cook the Vegetables

    Add the sliced vegetables to the skillet. Season with salt and black pepper to taste. Sauté for about 5-7 minutes until they are tender but still crisp.

Assemble the Bowl

    Prepare the Base

    Fluff the cooked rice with a fork and divide it among 4 serving bowls.

    Top with Salmon and Vegetables

    Place a blackened salmon fillet on top of the rice in each bowl and add the sautéed seasonal vegetables on the side.

    Serve immediately while hot, garnished with additional seasoning if desired.
