Preheat the Oven
Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 0.5 teaspoon of salt.

Cut in the Butter
Cut in 0.5 cups of unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Milk
Pour in 0.75 cups of milk and stir until just combined. Do not overmix.

Shape the Biscuits
Turn the dough onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round and cut out biscuits with a biscuit cutter or a glass.

Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes until golden brown. Remove from oven and let cool slightly.
Sausage Gravy

Cook Sausage
In a large skillet over medium heat, crumble and cook 1 pound of breakfast sausage until browned and cooked through.

Make Roux
Sprinkle 0.25 cups of all-purpose flour over the cooked sausage and stir for about 1 minute to create a roux.

Add Milk and Seasoning
Slowly whisk in 2 cups of milk, stirring constantly until the gravy thickens. Add 1 teaspoon of black pepper and salt to taste.
