Beef Birria Preparation

Prepare the Chiles
Remove the stems and seeds from the dried guajillo and ancho chiles. Soak them in hot water for about 15-20 minutes until softened.

Cook the Beef
In a large pot or Dutch oven, heat some oil over medium-high heat. Season the beef roast with salt and pepper, then brown on all sides. Pour the blended sauce over the beef and add the remaining beef broth and bay leaves.

Simmer
Cover the pot and let it simmer on low heat for 2-3 hours, or until the beef is tender and easily shredded.

Prepare the Tacos
In a skillet, warm the corn tortillas until soft. Add a portion of the shredded beef and top with cheddar cheese.

Crisp the Tacos
Fold the tortillas over and cook in the skillet until the cheese is melted and the tortillas are crispy, about 2-3 minutes on each side.

Serve
Serve the tacos with chopped onions, cilantro, lime wedges, and the reserved birria broth on the side for dipping.
