Beef Birria

Method

Beef Birria Preparation

  1. 1

    Prepare the Chiles

Remove the stems and seeds from guajillo and ancho chiles. Soak them in hot water for about 15 minutes until softened.

  2. 2

    Make the Marinade

In a blender, combine soaked chiles, garlic, cumin, oregano, salt, black pepper, and lime juice. Blend until smooth.

  3. 3

    Cook the Beef

In a large pot, add beef chuck roast and pour in the marinade over the meat. Add beef broth and bay leaves. Bring to a boil, then reduce heat to low, cover, and simmer for about 2-3 hours until the beef is tender.

  4. 4

    Shred the Beef

Once cooked, remove the beef from the pot, shred it with two forks, and return it to the pot. Stir to combine with the broth.

Fries Preparation

  1. 5

    Prepare the Fries

Preheat the oven according to the directions on the frozen French fries package. Spread the fries on a baking sheet and bake until golden and crispy, usually around 20-25 minutes.

  2. 6

    Season the Fries

Remove fries from the oven and sprinkle with salt while they are still hot.

Assembly

  1. 7

    Assemble the Fries

On a serving platter, layer the crispy fries. Top with the shredded beef birria, followed by shredded cheese, chopped onions, chopped cilantro, and sour cream.

  2. 8

    Add Jalapeños

Finish with sliced jalapeños on top, adjusting the quantity to your taste.
