    Cook the Bacon

    In a large skillet over medium heat, cook the bacon slices until they are crispy, about 5-7 minutes. Once cooked, transfer to a plate lined with paper towels to drain excess fat.

    In the same skillet, drain excess bacon grease, leaving about 1 tablespoon. Add the diced onion and sliced mushrooms to the skillet. Sauté until the onions are translucent and mushrooms are tender, about 5 minutes.

    Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Stir occasionally to combine with the onions and mushrooms.

Cooking the Scramble

    In a bowl, crack the eggs and whisk them together with salt and black pepper until fully combined.

    Crumble the cooked bacon and add it to the vegetable mixture in the skillet. Pour the whisked eggs over the mixture and stir gently to combine.
