Pie Crust

Prepare the Pie Crust
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter with a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Preheat Oven
Preheat your oven to 425°F (220°C).
Apple Filling

Prepare the Apples
Peel, core, and slice the apples into thin wedges. Place the apples in a large bowl.

Mix the Filling
Add the granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, flour, and vanilla extract to the apples. Toss until the apples are evenly coated with the mixture.

Fill the Pie
Pour the apple filling into the prepared pie crust, spreading it evenly.

Prepare the Egg Wash
In a small bowl, whisk together the egg and milk. Brush the mixture over the edges of the pie crust.

Cover with Top Crust
Roll out the second disc of dough and place it over the filled pie. Trim and crimp the edges to seal. Cut slits in the top crust to allow steam to escape.
Baking

Bake the Pie
Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for about 45-50 minutes, or until the crust is golden brown and the filling is bubbling.

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving.

Slice the cooled pie and serve each slice warm with a scoop of vanilla ice cream.
