Sandwich

Side 1 — Potato Chips

Side 2 — Pickle Spear

Method

Sandwich

  1. 1

    Prepare bread

Optional: Lightly butter one side of each bread slice. Heat a skillet over medium heat. Toast bread butter-side down 1–2 minutes until golden (or leave untoasted if preferred). Remove and place on work surface, toasted side up.

  2. 2

    Season tomato

Lay the tomato slices on a paper towel and sprinkle with 1/8 tsp salt and a light grind of black pepper (about 1/16 tsp). This draws excess moisture and seasons the tomato.

  3. 3

    Assemble spread

In a small bowl mix mayonnaise and Dijon mustard. Spread the mixture evenly over the untoasted sides (or unbuttered sides if toasted) of both bread slices.

  4. 4

    Layer sandwich

On the bottom slice (mayo side up) place the lettuce leaf first (this creates a moisture barrier), then fold or arrange 6 oz of sliced turkey evenly over the lettuce. Top turkey with the cheddar slice, seasoned tomato slices, red onion rings, and pickle slices.

  5. 5

    Finish

Place the top slice of bread mayo-side down to close the sandwich. If desired, press lightly and cut the sandwich in half on the diagonal. Secure with toothpicks if needed. Serve immediately with two sides and the sauce on the side.

Sauce (served on side)

  1. 6

Combine 2 tablespoons cranberry mayonnaise and 1/2 tsp lemon juice in a small ramekin. Whisk until smooth and season with 1/16 tsp black pepper. Taste and adjust (add up to 1/2 tsp more lemon for brightness or 1/2 tsp honey for sweetness). Serve alongside the sandwich for dipping or spreading.

Side 1 — Potato Chips

  1. 7

Portion 1 1/2 cups of potato chips into a small bowl or side compartment. If serving house-made chips, fry or bake according to your recipe and season with a pinch of salt while hot.

Side 2 — Pickle Spear

  1. 8

Cut one whole dill pickle into a spear. Pat dry and serve chilled alongside the sandwich.
