Method

Prepare BBQ Spread

    Mix sauce

    In a small bowl, combine 1 tablespoon mayonnaise, 3 tablespoons barbecue sauce, 1 teaspoon Dijon mustard, 1 teaspoon honey (if using), 1 teaspoon smoked paprika and a pinch of black pepper. Whisk until smooth and taste; adjust sweetness or tang by adding a little more honey or mustard. Set aside.

Assemble Sandwiches

    Butter bread

    Lay out 8 slices of bread. Evenly spread about 1/2 tablespoon (total 4 tablespoons across 8 slices) softened butter on one side of each slice. The buttered side will be the outside for grilling.

    Spread BBQ on bread

    On the unbuttered side of 4 bread slices, spread about 3/4 to 1 tablespoon of the BBQ spread prepared earlier. This will flavor the interior of the sandwich.

    Layer fillings

    On top of the spread slices, add 3 ounces (about 3 slices) of smoked ham per sandwich (12 oz total divided across 4), then place two slices of cheddar cheese over the ham. If using pickles or red onion, add 2 pickle slices and about 1 tablespoon of thinly sliced red onion per sandwich. Sprinkle a little chopped cilantro or parsley if desired.

    Close sandwiches

    Top each sandwich with the remaining bread slice, buttered side facing out. Press gently to compact layers slightly.

Cook Sandwiches

    Stovetop / Skillet method

    Heat a large skillet or griddle over medium heat. Place 2 sandwiches in the skillet (don’t overcrowd) and cook for 3–4 minutes per side, pressing gently with a spatula or a heavy pan, until bread is golden brown and cheese is melted. If bread browns too quickly before cheese melts, lower the heat to medium-low and cover the skillet for 1–2 minutes to trap heat and finish melting.

    Alternative: Panini press or sandwich maker

    Preheat panini press and cook sandwiches for 3–5 minutes, or until golden and cheese is melted. Follow manufacturer’s instructions.

    Rest and slice

    Remove sandwiches from heat and let rest 1 minute. Slice each sandwich in half diagonally and serve warm. Provide extra BBQ sauce on the side for dipping if desired.
