Prepare the Broth
In a saucepan, bring the vegetable broth to a gentle simmer over medium heat. Keep it warm throughout the cooking process.

Sauté the Mushrooms
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the wild mushrooms and cook for about 5-7 minutes until they're tender and browned. Season with salt and pepper. Remove from skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the chopped shallots and minced garlic. Sauté for about 3-4 minutes until the shallots are translucent.

Add Broth Gradually
Pour in 1 cup of the warm vegetable broth and stir gently until the liquid is mostly absorbed. Continue to add the broth, one cup at a time, stirring frequently. Wait for each addition to be absorbed before adding the next.

After about 15-20 minutes, when the rice is creamy and al dente, stir the sautéed mushrooms back into the risotto.

Once the rice reaches the desired consistency (around 20-25 minutes total), remove the skillet from heat. Stir in the Parmesan cheese or nutritional yeast, fresh parsley, and adjust seasoning with salt and pepper to taste.
